Avocado Sorbet (Edit recipe)

In the early years of our Paleo journey, making this was one our first ventures in dessert making. It turned out great and gosh was it delicious! After many months of not having something cool to enjoy, it was a true delight! This avocado lime sorbet was an instant hit! The avocado provides the creaminess here and the lime juice a bright freshness. It makes a light and delicious palette cleanser after a heavy meal. Dessert has to be good enough that you want to enjoy it after a full meal. A recipe we had to cut from our COOKBOOK and one we think you'll be surprised how much you LOVE.

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Peel and pit avocados, then toss them into your food processor and blend until completely smooth. Remove from the processor and measure out 1½ cups and place back in the food processor bowl. Store any leftover purée for another use, like guacamole!
  2. Add remaining ingredients to the avocado purée and process until completely smooth and creamy. Pour into a large bowl or container and refrigerate for at least four hours or overnight for best results.
  3. Freeze sorbet in ice cream maker according to the manufacturer’s directions. Once complete, place in a freezer-safe container and store.
  4. When ready to enjoy, serve as is or with fresh fruit.
