- Preheat your oven to 400°F. Line a large baking sheet with parchment paper or lightly brush it with oil.
- Chop the cooked turkey breast into small cubes. Finely chop the pecans.
- In a large mixing bowl, combine the turkey, mascarpone, cranberries, and pecans. Gently fold until everything is evenly mixed.
- Place a wonton wrapper on a clean surface. Add a small scoop of the filling (about a teaspoon) to the center.
- Lightly moisten the edges of the wrapper with water using your finger or a brush, then fold it into a triangle. Press the edges to seal, then crimp with the back of a fork to secure.
- Arrange the filled wontons on the prepared baking sheet in a single layer. Lightly brush or spray the tops with oil.
- Bake for 10–12 minutes, or until golden and crisp, flipping halfway through for even browning.
- Let cool slightly before serving.
Notes
If you prefer to fry them, heat ½ cup of canola oil in a large skillet over medium-high heat. Fry the wontons in batches for about 2 minutes per side, or until golden. Drain on paper towels before serving.
