Baklava Pancakes
These baklava inspired pancakes are the perfection combination of salty and sweet, and are a simple way to reminisce on the taste of the classic baklava.
Ingredients
- 1 cup1 cup1 cup Oat Flour

- 0.5 cup0.5 cup0.5 cup Almond Flour

- 1 tsp1 tsp1 tsp Baking Powder

- 2 whole2 whole2 whole Eggs
- 0.75 cup0.75 cup0.75 cup Plain Greek Yogurt

- 1 tsp1 tsp1 tsp Pure Vanilla Extract

- 0.25 cup0.25 cup0.25 cup Pumpkin Seeds

- .25 cup.25 cup.25 cup Walnuts

- .25 cup.25 cup.25 cup Pistachios, Roasted
- .5 tsp.5 tsp.5 tsp Cinnamon, Ceylon

- 3 Tbsp3 Tbsp3 Tbsp Butter, Unsalted, grass-fed

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- ombine baklava spread ingredients in a mini food processor and blend about until sticky but not perfectly smooth
- In a medium sized bowl, whisk together the eggs, water, yogurt, and vanilla
- Add in the flours, baking powder, soda, salt, and cinnamon. Fold together
- Let sit and rest while heating up skillet
- Add butter or oil if needed* to skillet over medium heat
- Spoon 2-3 tablespoons of batter into the pan. Cook until bubbles form on the surface, then flip and cook for an additional 2 minutes, or until golden brown. Repeat with the remaining batter
- Layer pancakes with baklava spread and top with maple syrup or honey
