Nothing says cozy fall baking none other than a mix of banana bread and chai spices. This cake is thick, moist and filled with delicious nuts.

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Preheat oven to 350 degrees Fahrenheit
  2. In a large bowl sift gluten free flour, baking soda, baking powder and chai spices
  3. In a separate medium sized bowl cream cooled melted butter and sugars until light and fluffy
  4. Add in room temperature eggs one by one until fully mixed
  5. Next add mashed bananas and vanilla extract
  6. Set aside and use a food processor to chop your walnuts and pecans
  7. Combine dry ingredients with wet ingredients
  8. Fold in nuts
  9. Lastly add sour cream and mix thoroughly
  10. Line an 8" cake pan with parchment paper and spray the sides
  11. Fill with cake batter and let this sit for 10 minutes before baking
  12. Bake for 45-50 minutes, ensure the middle is fully cooked by using a fork or knife to check
  13. Once baked let this sit for 10 minutes then you can remove and add a simple glaze by brushing on with a pastry brush
  14. The glaze will harden
  15. Slice and enjoy!

Notes

If you want more or less chai spices feel free to play around with the amount. I wanted the chai to shine through. If you want a rounder cake you can go up to 10" cake pan.
