Banana Bread (GF)
There's many ways to make banana bread, here is mine! I love adding ginger for another flavor profile. The order the bananas for the loaf the better!
Ingredients
- 333 Banana, Over-ripe
- 0.5 cup0.5 cup0.5 cup Light Brown Sugar
- 0.5 cup0.5 cup0.5 cup Granulated White Sugar
- 2 tsp2 tsp2 tsp Vanilla Extract
- 222 Egg
- 0.25 cup0.25 cup0.25 cup Butter, Unsalted, Melted
- 1 tsp1 tsp1 tsp Cinnamon, Ground
- 1 tsp1 tsp1 tsp Nutmeg, Ground
- 0.5 tsp0.5 tsp0.5 tsp Salt
- 1.5 cup1.5 cup1.5 cup Gluten-Free 1-to-1 Baking Flour - Bob's Red Mill
- 1 tsp1 tsp1 tsp Ginger, Ground, Optional
- 0.50.50.5 Banana, Sliced long way

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- In a large bowl combine flour, cinnamon, nutmeg and ginger
- In a separate bowl mash bananas with a fork, then add melted butter, sugars and eggs
- Mix well and add in vanilla extract
- Combine wet ingredients to dry ingredients and mix well
- Preheat oven to 350 degrees Fahrenheit
- Place parchment paper into loaf pan
- Pour batter into the pan and add sliced half banana on top
- Bake for 50 minutes
Notes
Adding ginger adds another dimension of flavor and a hint of spiciness. *Optional to add a half sliced banana on top
