Banana Peanut Butter Snack Cake
Give those spotty bananas life with this PEANUT BUTTER BANANA SNACK CAKE.
This is gluten free, refined sugar free, and may or may not be the cake I make for myself for my birthday. This also has some added protein for extra benefits in the cake and frosting which makes it a little lower in carbs than your traditional cake.
This is incredibly fluffy and flavorful - a must make!

Ingredients
- 2 whole2 whole2 whole Banana, mashed
- 2 whole2 whole2 whole Egg
- 0.25 cup0.25 cup0.25 cup Peanut Butter
- 0.25 cup0.25 cup0.25 cup Classic Monkfruit Sweetener (with Allulose) - Lakanto, or 1/2 cup regular sugar
- 1 tsp1 tsp1 tsp Pure Vanilla Extract
- 0.75 cup0.75 cup0.75 cup Gluten Free 1-to-1 Baking Flour (Bob's Red Mill)
- 0.25 cup0.25 cup0.25 cup Vanilla Bean (Just Ingredients) Protein Powder, or 1/4 cup extra flour
- 1 tsp1 tsp1 tsp Baking Powder
- 0.5 tsp0.5 tsp0.5 tsp Redmond Real Salt
- 0.5 cup0.5 cup0.5 cup Plain Greek Yogurt
- 0.333 cup0.333 cup0.333 cup Peanut Butter
- 2 - 3 Tbsp2 - 3 Tbsp2 - 3 Tbsp Powdered Monkfruit Sweetener - Lakanto, or 1/4 cup regular powdered sugar

Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Mix wet ingredients together and then add in dry ingredients and stir until smooth.
- Pour into an 8x8 baking dish and bake at 350 for 25-30 min.
- Mix everything together for your frosting and wait until the cake has cooled fully before frosting.
- Store in fridge and let come to room temp before enjoying.
