Carrot Raisin Granola Bars
These no bake carrot raisin granola bars are the perfect little snack for your kids and an EASY way to get a veggie in! I made these nut free using sunbutter, but you can use whatever nut butter you'd like instead!
These are awesome because you can make them into squares if you don't have a granola bar mold - just press into a lightly greased or lined 8x8 pan and follow the rest of the directions for setting.
Ellie loves when I put this in her lunchbox and it's a great way to prep several snacks for the week!
Ingredients
- 1 cup1 cup1 cup One Degree Organic Oats
- 0.25 cup0.25 cup0.25 cup Pumpkin Seeds
- 1 tsp1 tsp1 tsp Ground Cinnamon
- 1 pinch1 pinch1 pinch ground Nutmeg
- 0.333 cup0.333 cup0.333 cup Sunbutter, + 1 TBS (or nut butter of choice)
- 1 Tbsp1 Tbsp1 Tbsp Pure Maple Syrup, or honey
- 1 Tbsp1 Tbsp1 Tbsp Water
- 1 Tbsp1 Tbsp1 Tbsp Raisins
- 1 whole1 whole1 whole Carrots, chopped small or grated

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Mix everything together in a bowl.
- Press into your bar mold or an 8x8 pan sprayed lightly with oil, or use parchment paper.
- Let sit in the fridge for at least 3 hours before removing from mold/cutting into squares. Carefully take them out. If they break, you can easily re-form.
Notes
These make 6 granola bars or 9 squares.
