  1. Preheat oven to 350°F/177°C. Line an 8x8-inch baking pan with parchment paper so that it hangs over the sides. Set aside.
  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a medium bowl, whisk together melted butter and brown sugar.
  4. Add the eggs and vanilla and whisk vigorously for 1 minute until smooth and light in color.
  5. Gently fold the dry ingredients into the wet ingredients. Be careful not to overmix!
  6. Fold in the sprinkles and white chocolate chips.
  7. Pour the batter into the prepared baking dish. Gently press the chopped cookies into the top of the batter.
  8. Bake for 27-30 minutes. Edges will be lightly browned and begin to pull away from the baking pan.
  9. Allow the blondies to cool completely in the pan set on a wire rack.
