Blueberry Muffin Bowl
okay guyssss!! i have no idea why i didn't try this earlier (blueberry muffins are literally one of my favourite things on earth - ps if you're on the GC and haven't tried the Custard Canteen ones, you need to immediately!!)
this makes a perfect high protein, super duper easy breakfast. you only need 6 ingredients, mix em together, spoon into a baking dish and bake for 12ish mins!
Ingredients
- 120 grams120 grams120 grams High Protein Yoghurt - YoPRO
- 50 grams50 grams50 grams All Purpose Flour
- 1 Tbsp1 Tbsp1 Tbsp Stevia, Granulated, or any granulated sweetener you desire

- 0.5 tsp0.5 tsp0.5 tsp Baking Soda
- 0.5 tsp0.5 tsp0.5 tsp Baking Powder

- 1 whole1 whole1 whole Egg
- 100 grams100 grams100 grams Blueberries
- 1 Tbsp1 Tbsp1 Tbsp Stevia, Granulated, or any granulated sweetener you desire

- 2 tsp2 tsp2 tsp High Protein Yoghurt - YoPRO
- 1 Tbsp1 Tbsp1 Tbsp Milk

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Fold all the ingredients (except the topping and glaze) together in a bowl until combined.
- Spoon mixture into an oven-safe baking dish, as per the video.
- Spread blueberries evenly around the mixture and sprinkle with granulated sweetener.
- Bake in the air fryer at 170℃ for 12-15 mins.
- For the glaze: Whisk yoghurt and milk together until smooth and drizzle over the blueberry muffin bake once ready. Enjoy!
