Breakfast Burritos
These are super simple to assemble and make for such a great easy breakfast in the mornings. I meal prep these on Sunday for my kids during the week.
Ingredients
- 1 lb1 lb1 lb Chorizo, Ground, Whole Foods brand
- 8 whole8 whole8 whole Eggs, Beaten
- 2 cups2 cups2 cups Cheddar Cheese, Shredded

- 888 Flour Tortilla, Warmed

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- In a large skillet cook the chorizo over medium heat
- When chorizo is cooked through, add the eggs stirring constantly so they don’t burn
- Lay the tortillas out and place a little bit of the egg and chorizo mixture in the middle of the tortilla
- Sprinkle cheese on top
- Fold two sides in, then tuck and roll, ending seam side down
- Store in a container in the refrigerator
- When ready to heat, place the seam side down in a greased skillet, cooking until brown and flipping until brown on the other side
