by now you know i’ll turn my protein pancakes into literally anything! 🥞✨ meet the brunch version of nachos: crispy pancake "chips" are loaded with cheesy eggs, bacon, sausage, avocado, & berries—protein-packed, wholesome, & downright delicious!

  1. make a batch of my greek yogurt pancakes in bite size “chips” or tear a regular size pancake into “chips”.
  2. in a skillet, add pancakes & heat until slightly crispy.

assembling your pan-nachos

  1. make a batch of cheesy eggs, warm up chicken sausage + bacon, & if using compote, make a batch (or just use your favorite maple syrup).
  2. to a plate or bowl, layer: pancake “chips” → cheesy eggs → cooked chicken sausage & bacon → avocado → blueberries → drizzle of compote or syrup → sprinkle of red pepper flakes.
