Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Dice your onion, garlic and jalapeno and add it to your pot with butter. Saute until the onions start to become translucent or 2-3 minutes.
  2. Add the diced tomatoes and black beans to the pot. Then add in the seasonings.
  3. Dice your chicken into cubes, add to the pot and cover with your chicken stock.
  4. Cover the pot and put the heat on medium-low and let simmer for about an hour – the longer, the better!
  5. 15 minutes before you are ready to serve, add in the corn.
  6. Slice your corn tortilla into thin strips, place on a baking sheet, and put them under the broiler for 3-5 minutes or until crispy.
  7. Top your soup with the crispy tortilla strips and your favorite fixings (sour cream, avocado, shredded cheese, etc)!
