Bunny Rolls
The perfect little treat for Easter morning, Easter brunch or even a fun kitchen adventure with the kids or grandkids. If you know how to roll a cinnamon roll, you're practically a pro at making these bunnies! You can use my Gluten Free Cruffin recipe or my new Baklava Sweet Roll recipe, skipping the caramel sauce and the nuts inside. Or maybe you like the nuts, totally you call!
Ingredients
- 1 whole1 whole1 whole Gluten Free Cruffins (click for recipe), see links above
- 1 whole1 whole1 whole Egg, mixed w/ 1 tbsp of water for egg wash
- 2 - 3 Tbsp2 - 3 Tbsp2 - 3 Tbsp Granulated White Sugar, to sprinkle on top before baking
- 2 - 3 Tbsp2 - 3 Tbsp2 - 3 Tbsp Powdered Sugar, to dust on top after they're baked
Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat oven to 350° - prepare baking sheet(s) with parchment paper and set aside.
- Make whichever dough recipe you've chosen to use as directed. Roll out into rectangle shape then cut the dough into long strips, about 1½” wide, from short side.
- Roll one strip up, then place on the baking sheet. Unwind the strip about on third and shape the bunny ears, pressing the end of the strip to the roll where it meets the other side of the bunny "face"--alternately you can use the egg wash to brush a bit where the strip connects to the "face" to essentially stick it in place. Repeat with each of the strips, placing them about 2" apart of the baking sheet.
- Cover and let rise for 15-20 minutes. Apply egg wash (opt, but will make for a nice golden color) then sprinkle tops with granulated sugar. If you've made the ear forms, place those at the base of where the ears pinch together on the face.
- Bake for 20-25 minutes or until golden brown. Remove from the oven and allow to cool slightly then dust with powdered sugar as desired.
- Best enjoyed the day you bake them, but do freeze well!
Notes
With a few skewers and kitchen twine you can make forms to hold their shape a little bit, but not required. Watch the reel linked below for a little tutorial. I'd suggest making them ahead of time so that you don't let those bunnies rise too long!
