Butternut Bacon Chili
I love chili because it very versatile and can be adjusted many different ways. In this version I ramped up the veggies by adding butternut squash. Chili is the perfect dish for a cool day and can be topped with lots of different goodies. For FoodSocial’s Recipe Rumble I used the US Wellness Meats bacon, Primal Palate’s Meat and Potatoes spice mix, Citreve’s cherry tomatoes, and Jozo’s soy sauce. - 1 Tbsp1 Tbsp1 Tbsp Extra Virgin Olive Oil

- 1 lb1 lb1 lb Ground Beef

- .5.5.5 Onion, I prefer red, small dice
- .5.5.5 Green Bell Pepper, small dice
- .5.5.5 Red Bell Pepper, small dice
- 111 Celery, small dice
- .33.33.33 Butternut Squash, small dice
- 111 Jalapeño Pepper, seeded and minced
- 3 cloves3 cloves3 cloves Garlic, minced

- 2 Tbsp2 Tbsp2 Tbsp Chili Powder
- 1 tsp1 tsp1 tsp Meat & Potatoes Seasoning - Primal Palate

- 1 tsp1 tsp1 tsp Sea Salt

- 1 tsp1 tsp1 tsp Black Pepper

- 1 tsp1 tsp1 tsp Parsley, Dried

- 1 tsp1 tsp1 tsp Cumin, Ground

- 1.5 cups1.5 cups1.5 cups Tomato Sauce
- 1 cup1 cup1 cup Freeze-Dried Cherry Tomatoes - CITREVE

- 2 tsp2 tsp2 tsp Barrel Aged Tamari Soy Sauce - Jozo

- .5 cup.5 cup.5 cup Water
- 1.5 cups1.5 cups1.5 cups Beef Bone Broth

- 15 oz15 oz15 oz Pinto Beans, rinsed, or you can use black beans

- 1 cup1 cup1 cup Aged Cheddar Cheese, grated

- 222 Green Onion (Scallion), sliced

- 2 sprigs2 sprigs2 sprigs Cilantro, Remove stem and chop

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- In a Dutch oven add bacon and cook on medium until done. Stir frequently.
- Remove onto small plate and set aside.
- Add oil and ground beef and cook on medium until browned, break apart as it cooks. About 7 minutes.
- Add onion, bell peppers, celery, butternut, jalapeno, garlic, and all spices. Stir and cook for a minute.
- Add tomato sauce, cherry tomatoes, soy sauce, water, bone broth, and pinto beans. Stir, then cover, and turn heat to low.
- Cook for an hour, stir every 10 minutes or so.
- Dish up and top as you like.
Notes
You can top with other things too, diced onions, tomatoes, salsa…the ideas are endless.
