Caprese Pesto Baguettes (Edit recipe)

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. In a small bowl, mix together the tomatoes, mozzarella, and 2 tablespoons of the marinated oil. Add a pinch of salt and fresh basil, then toss together. Set aside.
  2. Slice your baguette into 1/4 inch slices, line on a baking sheet, and bake at 375°F until lightly toasted. Remove from the oven and let cool for just a couple of minutes.
  3. Once slightly cooled, spread pesto evenly on each slice (add as much as you like)! Top with a small spoonful of the tomato and mozzarella mixture.
  4. Sprinkle with extra basil and drizzle with olive oil. Enjoy!

Notes

This is a great little recipe because you can use as much or as little of each ingredient as you enjoy. Love pesto? Smear it on top! Only want a little? That’s okay too! The same applies to every ingredient here—including the basil. You can absolutely also use pre-made pesto instead of making your own.
