Caramel Apple Candy Bars
Gluten-free, vegan, peanut-free + refined sugar-free, these Caramel Apple Candy Bars are the healthy fall snack you never knew you needed. Caramel-like Medjool dates are stuffed with almond butter, Apple Pie Apples (recipe linked below in notes) then dipped in melted chocolate and sprinkled with coarse sea salt.
Ingredients
- 9 whole9 whole9 whole Medjool Dates, Sliced part way to remove pits (do not slice all the way through)
- 2 Tbsp2 Tbsp2 Tbsp Almond Butter, I used Georgia Grinders Maple Caramel Almond Butter
- 9 pieces9 pieces9 pieces Gala Apple, *See Notes for Apple Pie Apples recipe link*
- 0.5 cup0.5 cup0.5 cup Pascha 55% Organic Vegan Semi-Sweet Dark Chocolate Chips, Melted
- 0.25 - 0.5 tsp0.25 - 0.5 tsp0.25 - 0.5 tsp Sea Salt, I used extra coarse sea salt (amount of salt may vary based on personal preference)

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Add dollop of almond butter to each Medjool date. Top with one slice of Apple Pie Apples (recipe linked below). If you do not want to make the Apple Pie Apples for these, substitute peeled and sliced Gala apple (use 1 slice for each date; sliced 1/8”-1/4” inch thick).
- Use spoon to drizzle melted chocolate over dates until tops are completely coated. Sprinkle with desired amount of sea salt. Place in fridge about 20 minutes for chocolate to harden. Store in fridge up to 4 days.
