Carolina Reaper hot sauce is an intensely spicy roasted pepper sauce made with Carolina Reaper peppers, garlic, onion, distilled white vinegar, salt, and water. The finished sauce has extreme heat, savory roasted notes, and a clean vinegar finish. Carolina Reaper peppers average about 1,641,183 Scoville Heat Units (SHU), making this an extremely hot sauce that is best used in small amounts. The recipe takes about 45 minutes and produces approximately 10 fl oz (300 ml) of smooth strained hot sauce. Serve it with fried chicken, tacos, grilled meats, eggs, burgers, ramen, pho, noodle soups, and other savory dishes.

  1. Step 1: Roast the peppers, garlic, and onion. Preheat the oven to 400°F (204°C). Place Carolina Reaper peppers, halved white onion, and garlic bulb with the top cut off on a baking sheet. Roast for 15–20 minutes until peppers soften, develop lightly charred areas, and onion becomes tender. Allow ingredients to cool for 5–10 minutes before handling.
  2. Step 2: Blend the roasted ingredients. Transfer roasted Carolina Reaper peppers and onion into a blender or food processor. Squeeze roasted garlic cloves from their skins and add them to the peppers. Add distilled white vinegar and salt, then blend until the mixture becomes a thick pepper paste.
  3. Step 3: Adjust the consistency. Add water and blend again until the sauce becomes smooth and pourable. Add additional water 1 tablespoon at a time if the sauce is too thick.
  4. Step 4: Strain the sauce. Pour the blended sauce through a fine-mesh strainer and press gently to remove coarse skins and seeds. Leave some pulp for a thicker texture if preferred.
  5. Step 5: Bottle the sauce. Transfer the strained sauce into clean glass hot sauce bottles or airtight jars. Allow the sauce to cool completely, seal the containers, and refrigerate.

Notes

Wear food-safe gloves when handling Carolina Reaper peppers. Keep the kitchen well ventilated while roasting and blending superhot peppers. Carolina Reaper peppers contain extremely high capsaicin levels, so use small amounts when tasting or serving. Remove more inner pepper tissue before roasting for a milder version. Combine Carolina Reaper peppers with milder peppers such as red habanero to reduce heat while maintaining fruity pepper flavor. Store the finished sauce refrigerated because this homemade recipe does not use a validated shelf-stable preservation process.
