  2. Step 2: Make the 3% salt brine. Dissolve 0.53 oz (15 g) non-iodized salt into 17.6 oz (500 g) non-chlorinated water. Stir until the salt completely dissolves.
  3. Step 3: Ferment the peppers. Place peppers into a clean fermentation jar and cover completely with 3% brine. Add a fermentation weight, seal with an airlock or fermentation lid, and ferment at 65–75°F (18–24°C) away from direct sunlight for 14–30 days.
  4. Step 4: Check fermentation. Check for softened peppers, cloudy brine, and a clean sour aroma. Measure pH with a calibrated food pH meter and confirm it reaches 4.6 or lower before continuing.
  5. Step 5: Drain peppers and reserve brine. Drain the fermented peppers and reserve at least 4 fl oz (120 ml) of brine for later adjustment.
  6. Step 6: Blend with vinegar. Add fermented peppers and 21 oz (600 g) distilled white vinegar into a blender. Blend until smooth, then add remaining vinegar gradually until the sauce reaches the preferred acidity and thin consistency.
  7. Step 7: Adjust flavor and consistency. Add more vinegar for sharper acidity or reserved fermentation brine in small amounts to loosen the sauce while maintaining fermented flavor.
  8. Step 8: Simmer the sauce (optional). Simmer the blended sauce gently for 15–20 minutes if a smoother, more integrated flavor is preferred.
  9. Step 9: Strain and bottle. Strain the sauce through a fine-mesh sieve for a thinner texture. Transfer into clean bottles or jars and refrigerate.

Notes

Use non-iodized salt and non-chlorinated water for fermentation. Keep peppers fully submerged under the brine throughout fermentation. Ferment for 14–30 days depending on the preferred balance of fresh pepper flavor and fermented tang. Use a calibrated pH meter to check fermentation before blending. Wear food-safe gloves when handling fresh Tabasco peppers. Store the finished sauce refrigerated because this homemade recipe does not use a validated shelf-stable preservation process.
