Cheddar Sour Cream Chicken Tenders
My mom is not a cook, nor is she a fan of cooking. But to her credit she made dinner from scratch every night. This simple tasty dish was a go to on weeknights. As a working mom she had a several easy meals we ate on repeat. If you have kids this is the perfect dish to get them involved in the kitchen. This version is healthier using quality ingredients.
Ingredients
- 4.25 oz4.25 oz4.25 oz Farmhouse Cheddar Almond Flour Crackers - Simple Mills
- .5 cup.5 cup.5 cup Sour Cream, or buttermilk
- 1 tsp1 tsp1 tsp Sea Salt

- 1.5 lb1.5 lb1.5 lb Pastured Chicken Tenders - US Wellness Meats

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- If you have a stainless cookie sheet add oil and coat, you can use parchment paper but it will make the underside more soggy.
- Before opening the crackers bag use a rolling pin or measuring cup to pound the crackers into small pieces.
- In a dish with 1” sides add the crackers and salt, stir.
- Put the chicken tenders onto a plate and scoop out the sour cream on top.
- Using clean hands massage the sour cream on all sides of the tenders.
- Taking one tender at a time roll in the cracker bits until well coated.
- Place onto cookie sheet.
- Cook for 15-18 minutes on 350 degrees.
Notes
Be sure to check the chicken, you want it to be 165 degrees at the thickest part. Buttermilk works great as well if you don’t have sour cream. Both add a nice creamy fat to the end result.
