“Cheesy” Broccoli Sweet Potato Soup
This "cheesy" Broccoli Sweet Potato Soup gets its cheesy flavour from nutritional yeast which adds B vitamins which are good for the nervous system. This is a great meal prep recipe for lunches. I love to make a batch and store them in mason jars and heat them up and toss them in a thermos for those winter lunches. It's also great for a light dinner.
Ingredients
- 444 Sweet Potato, large in size, cubed
- 2 head2 head2 head Broccoli, cut into bites sized pieces
- 222 Onion, medium in size, coarsely chopped
- 1 head1 head1 head Garlic, top chopped off

- 8 cups8 cups8 cups Bone Broth

- 1 Tbsp1 Tbsp1 Tbsp Chili Powder
- 0.75 cup0.75 cup0.75 cup Nutritional Yeast, divided

- 4 cups4 cups4 cups Chickpeas
- 2 Tbsp2 Tbsp2 Tbsp Coconut Oil

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat oven to 400F
- Line 1-2 baking sheets with parchment paper
- Chop veggies into bite sized pieces
- Place coconut oil onto baking sheet lined with parchment paper and set in the oven to melt for 1-2 minutes
- Remove from oven and place the chopped veggies on baking sheet and use a spoon to stir the veggies around to coat with coconut oil
- Add head of garlic to baking sheet
- Sprinkle with chilli powder and 1/4 cup nutritional yeast
- Bake for 25 minutes
- Place veggies in a large soup pot and pour bone broth over veggies
- Add 1/2 cup nutritional yeast, chickpeas and a dash of salt
- Bring to a boil and simmer until warm
