“Cheesy” Broccoli Sweet Potato Soup (Edit recipe)

This "cheesy" Broccoli Sweet Potato Soup gets its cheesy flavour from nutritional yeast which adds B vitamins which are good for the nervous system.  This is a great meal prep recipe for lunches. I love to make a batch and store them in mason jars and heat them up and toss them in a thermos for those winter lunches.  It's also great for a light dinner.

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Preheat oven to 400F
  2. Line 1-2 baking sheets with parchment paper
  3. Chop veggies into bite sized pieces
  4. Place coconut oil onto baking sheet lined with parchment paper and set in the oven to melt for 1-2 minutes
  5. Remove from oven and place the chopped veggies on baking sheet and use a spoon to stir the veggies around to coat with coconut oil
  6. Add head of garlic to baking sheet
  7. Sprinkle with chilli powder and 1/4 cup nutritional yeast
  8. Bake for 25 minutes
  9. Place veggies in a large soup pot and pour bone broth over veggies
  10. Add 1/2 cup nutritional yeast, chickpeas and a dash of salt
  11. Bring to a boil and simmer until warm
