  1. Heat oil
  2. Add onions & celery & cook till onions are translucent
  3. Add bell peppers, stir one minute
  4. Add pork & cook till no longer pink
  5. Add sweet potatoes, diced tomatoes, salsa, tomato paste. broth, jalapeño & spice
  6. Increase heat & bring to a boil
  7. Lower heat & simmer 15 minutes
  8. Add cilantro, stir well
  9. Serve with garnishes
