Pork & Sweet Potato Chili
Do you love chili all year round? I sure do! This Pork & Sweet Potato Chili is rich and hearty and everything a chili should be! It is loaded with veggies and delicious, good for you bone broth and makes a big batch so there will be plenty of leftovers for lunches during the week.
Ingredients
- 2 lb2 lb 2 lbPork Loin, cut in bite size pieces
- 2 Tbsp2 Tbsp 2 TbspExtra Virgin Olive Oil
- 1 cup1 cup 1 cupOnion, diced
- 3 pieces3 pieces 3 piecesCelery, diced
- 1 whole1 whole 1 wholeGreen Bell Peppers, diced small
- 3 cups3 cups 3 cupsSweet Potato
- 1 whole1 whole 1 wholeJalapeño, diced, leave seeds for more heat
- 15.5 oz15.5 oz 15.5 ozFire Roasted Diced Tomatoes
- 12 oz12 oz 12 ozSalsa, of choice
- 16.9 oz16.9 oz 16.9 ozChicken Bone Broth
- 2 Tbsp2 Tbsp 2 TbspTomato Paste
- 1 tsp1 tsp 1 tspSalt
- 1 tsp1 tsp 1 tspGarlic Powder
- 1 Tbsp1 Tbsp 1 TbspGround Cumin
- 0.5 bunch0.5 bunch 0.5 bunchCilantro, chopped
- 2 whole2 whole 2 wholeGreen Onion (Scallion), sliced for garnish
- 1 whole1 whole 1 wholeAvocado, sliced for garnish







Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Heat oil
- Add onions & celery & cook till onions are translucent
- Add bell peppers, stir one minute
- Add pork & cook till no longer pink
- Add sweet potatoes, diced tomatoes, salsa, tomato paste. broth, jalapeño & spice
- Increase heat & bring to a boil
- Lower heat & simmer 15 minutes
- Add cilantro, stir well
- Serve with garnishes
