Cheesy Bruschetta Bites
Bruschetta is like, the easiest and safest spring / summer appetizer. Who doesn't love fresh tomatoes, basil, and crispy bread? I decided to broil some mozz on my baguette bites for a little something special. Finished with grana padano & balsamic reduction. So addictive <3
Ingredients
- 235 grams235 grams235 grams Baguette, Thin French Baguette. You need 12 approx 1" slices.
- 12 Tbsp12 Tbsp12 Tbsp Mozzarella, Pizza Mozz, shredded.
- 1 cup1 cup1 cup Tomato, Cherry, Medley Tomatoes. Chopped.
- 1.5 Tbsp1.5 Tbsp1.5 Tbsp Red Onion, finely diced
- 1 clove1 clove1 clove Garlic, crushed & minced
- 1 Tbsp1 Tbsp1 Tbsp Basil, Fresh, Torn OR rolled & sliced thinly (chiffonade)
- 1 whole1 whole1 whole Extra Virgin Olive Oil, See Recipe
- 1 whole1 whole1 whole Himalayan Pink Salt, See Recipe
- 1 whole1 whole1 whole Grana Padano Cheese, finely shredded for garnish
- 1 whole1 whole1 whole Organic Balsamic Glaze

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- In a small bowl, mix together the tomatoes, basil, red onion, garlic, drizzle of EVOO, and salt to taste. Once mixed, set aside.
- Preheat a grill pan to just below medium. Once heated, brush both sides of each slice with EVOO and slap on the grill. Grill until golden brown, flip, and continue until the other side is crisp and golden.
- Preheat your oven to BROIL 500 F / HIGH. In the meantime, get your crispy baguettes on to a parchment lined baking sheet. Top each baguette slice with a Tbsp. (or more if desired) of shredded mozz. Place the tray in to the oven until the cheese is bubbly and slightly golden. Remove and set on to a wire cooling rack.
- Spoon bruschetta topping on to each cheesy crostini. You should use all of the bruschetta. When I originally tested the recipe, I did so with 8 crostini and had what looked like enough for 4 leftover. Garnish each crostini with some finely shredded grana padano and finish with a drizzle of balsamic reduction.
- Serve & ENJOY!
Notes
- Make sure your balsamic glaze is cold! I had just purchased mine off the shelf and it does NOT drizzle nicely when warm lol
