RRP & Feta Chik’n Pitas
I just love quick and delish these pitas are for weeknight eats. Garlicky hummus, fresh veggies, roasted peps, seasoned & fried strips, creamy cucumber dressing, and tangy feta.
Ingredients
- 2 whole2 whole2 whole Pita, Greek Pitas
- 397 grams397 grams397 grams Plant-Based Chick'n Strips - Gardein, 1/2 the bag + Himalayan salt, Greek Seasoning, Primal Palate Meat & Potatoes Seasoning, Pep Flakes & Cracked Pepper
- 1 whole1 whole1 whole Extra Virgin Olive Oil, for frying
- 1 whole1 whole1 whole Boston Lettuce, washed and dried, Enough for two pitas
- 227 grams227 grams227 grams Hummus, I used roasted garlic hummus
- 0.25 whole0.25 whole0.25 whole English Cucumber, sliced
- 0.25 whole0.25 whole0.25 whole Red Onion, sliced
- 1 whole1 whole1 whole Roasted Red Pepper, I used a sliced, jarred variety
- 1 whole1 whole1 whole Le Grec Cucumber Dressing
- 2 Tbsp2 Tbsp2 Tbsp Parsley, chopped

- 1 whole1 whole1 whole Feta Cheese, crumbled for garnish

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Begin heating a good splash of EVOO in a non-stick set to about medium. Once heated, add the frozen strips and season liberally with salt, pepper flakes, meat & potatoes seasoning, Greek seasoning & cracked pepper. Toss to coat the strips in the seasonings / EVOO. Cook about 10 minutes, flipping as needed for even browning and good crust action. Finish the strips with a little pinchy pinch of salt.
- To heat the pitas, I warmed up a grill pan on just below medium and once heated, pressed my first pita onto the heat for half a minute before flipping and continuing until nice and floppy / malleable. Continue with your second pita.
- To assemble, start by spreading a generous amount of garlicky hummus on each pita followed by some fresh lettuce, sliced cukes, thinly sliced red onions, and some roasted pepper slices. Divide your strips between both pitas before drizzling the cucumber dressing and finishing with a sprinkle of fresh parsley and feta.
