maple-bacon–studded chicken meatballs made with either my homemade maple keto granola or nana joe's waffle cone granola, loaded with crispy bacon, then baked until juicy. served on the cutest little protein pancakes turned waffles & finished with a drizzle of berry compote for that sweet-savory magic 🤌

- 2 oz2 oz2 oz maple keto granola (click for recipe), choose my homemade granola or nana joe's!
- 2 oz2 oz2 oz Back Porch Paleo Waffle Cone Granola - Nana Joes, choose my homemade granola or nana joe's!

- 0.25 cup0.25 cup0.25 cup Golden Monkfruit Sweetener (with Allulose) - Lakanto

- 1 Tbsp1 Tbsp1 Tbsp Breakfast Blend - Primal Palate

- 1 lb1 lb1 lb Ground Chicken

- 0.25 cup0.25 cup0.25 cup Cottage Cheese
- 6-86-86-8 oven-baked bacon (click for recipe), finely crumbled

- greek yogurt protein pancakes & waffles (click for recipe), 1 made mini pancakes, then reheated in a waffle iron!
- mixed berry compote (click for recipe), any berry flavor!

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
chicken & waffle meatballs
- preheat oven to 400.
- first add maple flavored granola, monk fruit, & seasoning to a food processor & grind into a fine crumble.
- to a bowl, add dry mixture with remaining meatball ingredients.
- using a small cookie scoop, make mini meatballs (36-42).
- place meatballs on a lined baking dish, then bake for 12-15 minutes.
building your bites
- make a batch of my greek yogurt protein pancakes in waffles OR pancakes - I made them first as mini pancakes, then reheated in a waffle iron (this worked out a lot better!)
- make a batch of mixed berry compote - any flavor!
- to a mini waffle, add a meatball & drizzle with mixed berry compote.
