Chocolate Almond Date Balls
These chocolate almond date balls have a chewy center that's made with almonds and dates, then coated in dark chocolate. They're great for making ahead of time and storing in the fridge or freezer for a quick snack or dessert. These date balls are paleo, vegan and oat free!
Ingredients
- 1 cup1 cup1 cup Almonds, raw

- 1 cup1 cup1 cup Medjool Dates, pitted
- 1 pinch1 pinch1 pinch Salt

- 0.75 cup0.75 cup0.75 cup Dark Chocolate Chips

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Place the almonds, pitted dates and salt in a food processor.
- Blend, stopping every so often to scrape down the sides, until the mixture forms a ball of dough in the food processor. It will have a thick, sticky, caramel-like texture. This process takes about 3-5 minutes.
- Roll the mixture into balls, each about 1 tablespoon in size and place on a lined baking sheet.
- Place the balls in the freezer and freeze for at least 30 minutes.
- Melt the dark chocolate in a small dish, then dip the balls into the chocolate and place back on the lined baking sheet to set. You can drizzle remaining chocolate over the balls for decoration.
- Store in an airtight container or baggie in the fridge or freezer.
