These incredible chocolate cashew butter bites are low-carb, sugar-free, and easy to make. They are the most delicious sweet treat to satisfy sugar cravings while nourishing the body with healthy fats and metabolism-boosting minerals. Bonus: they are naturally gluten-free and can be made dairy-free and vegan too!

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Line a mini muffin pan with 12 mini liners.
  2. In a microwave-safe bowl, melt the chocolate in 30-second intervals, stirring after each interval until fully melted and smooth.
  3. Measure 1 teaspoon of melted chocolate into each liner and gently swirl the pan to coat the bottom of each liner. Place in the freezer while preparing the cashew butter filling.
  4. In a small mixing bowl combine the cashew butter, stevia, and salt until smooth.
  5. Spoon 1 teaspoon of cashew butter filling into each frozen chocolate cavity and spread to flatten slightly. Be careful not to spread it all the way to the edges.
  6. Top with 1 more teaspoon of melted chocolate and gently tap/swirl the pan to ensure each cup is fully covered.
  7. If desired, top each chocolate cashew butter cup with finely chopped cashews and a sprinkle of coarse sea salt. Enjoy once fully set.
