chocolate chip pancakes + peanut butter were my special occasion breakfast growing up đŸ„žđŸ„œ so why not make them a little extra, a LOT healthier, & meal-preppable for the whole week?

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. first make a batch of my chocolate chip protein cookie dough balls, but only use 1-2 t of water to reach more of crumbly consistency, rather than rolling into balls.
  2. store cookie dough streusel in freezer until ready to make pancakes.
  3. make my greek yogurt protein pancake batter, according to the recipe.
  4. heat a skillet or griddle over low-medium heat & grease with a little fat of choice (I always use leftover bacon grease).
  5. add ~Œ cup batter into skillet, then sprinkle on 1-2 T of cookie dough streusel on top.
  6. once bubbles appear, flip & cook until golden brown on other side.
  7. repeat until all pancakes are made.
  8. to make chocolate peanut butter collagen drizzle: microwave dark chocolate chips & peanut butter until melted → mix in chocolate collagen peptides, & water until reaches a nice fudgy consistency → drizzle on top of protein pancakes & enjoy!
