Chocolate Peanut Butter Crunch Bites (Gluten Free)
My love for chocolate and peanut butter treats runs deep. While this isn’t quite the same as a classic Butterfinger (one of my true loves), the flavors are definitely reminiscent, and it’s such a fun treat to make! Plus, it’s no-bake...which, let’s be real, is kind of my specialty when it comes to the dessert world! If you're looking for a gluten free cornflake, these are my go-to! These bites also feature our favorite wildflower honey from our dear friends’ farm, which makes them even more special.
Ingredients
- 2 cups2 cups2 cups Cornflakes, Nature's Path Honey'd Corn Flakes
- 2 Tbsp2 Tbsp2 Tbsp Honey - Shannon Farms, wildflower

- 2 Tbsp2 Tbsp2 Tbsp Cane Sugar
- 1/2 cup1/2 cup1/2 cup Creamy Peanut Butter

- 1/2 tsp1/2 tsp1/2 tsp Vanilla Extract

- 2 Tbsp2 Tbsp2 Tbsp Water, room temp
- 1 cup1 cup1 cup 55% Cacao Organic Vegan Semi-Sweet Dark Chocolate Chips - Pascha Chocolate Co., heaping cup

- 1.5 Tbsp1.5 Tbsp1.5 Tbsp Coconut Oil
- 1 pinch1 pinch1 pinch Maldon Sea Salt Flakes

- Lightly crush the cornflakes in a bowl, aiming for small flakes, not crumbs. Set aside.
- In a small saucepan over medium-low heat, combine sugar and honey. Stir until sugar dissolves and the mixture starts to bubble. Let it simmer for 1–2 minutes, then remove from heat.
- Stir in the peanut butter, vanilla, and salt until smooth and glossy. If the mixture feels too thick, gradually stir in up to 2 tablespoons of water, a little at a time, until it reaches a spreadable (but not runny) consistency.
- Pour the peanut butter mixture over the crushed cornflakes and stir to coat everything evenly.
- Using a medium scoop, portion out the mixture into little balls and place them on a parchment-lined tray, ensuring they’re spread out so they don’t touch.
- Pop the tray in the fridge for 20–30 minutes to set.
- In a small microwave-safe bowl, melt the chocolate and coconut oil together, stirring every 20 seconds, until smooth and fully melted.
- Dip each bite halfway or drizzle with chocolate, then sprinkle with a pinch of salt. Return to the fridge to set completely.
