Sweet Heat Chicken Caprese
The sweet heat from this balsamic glaze is unmatched! I used a Cherry Habanero Jam from Profanity Jam and it paired unbelievably well with the flavors in this salad. The quality of this chicken from US Wellness Meats is incredible every time, which is just another reason I know I can count on them for ingredients that truly stand out.
I packed my salad up in my favorite Weck jars (so perfect for on-the-go!), but you can toss it in any to-go container or build it in a big bowl to enjoy at home. However you serve it, this salad is super versatile, and the sweet heat adds such a fun, playful twist to a fresh, spring-forward classic.
Ingredients
For the Glaze
- 1/2 cup1/2 cup1/2 cup Balsamic Vinegar
- 1 Tbsp1 Tbsp1 Tbsp Cherry Habanero Jam - Profanity Jam
- 1 Tbsp1 Tbsp1 Tbsp Honey - Shannon Farms, wildflower
- 1/4 tsp1/4 tsp1/4 tsp Salt
For the Salad
- 1 lb1 lb1 lb Pasture-raised Chicken Breasts - US Wellness Meats, cubed
- 2 Tbsp2 Tbsp2 Tbsp Organic Everyday Extra Virgin Olive Oil - Kosterina
- 1 tsp1 tsp1 tsp Salt
- 1/2 tsp1/2 tsp1/2 tsp Black Pepper
- 1 tsp1 tsp1 tsp Garlic Powder
- 1.5 tsp1.5 tsp1.5 tsp Amore [Italian] Seasoning - Primal Palate
- 8 oz8 oz8 oz Mozzarella Pearls, quartered
- 8 oz8 oz8 oz Tomato, Grape, quartered
- 1/4 cup1/4 cup1/4 cup Basil, Fresh, chiffonade, finely shredded
Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
For the Glaze
- In a small saucepan over medium heat, combine the balsamic vinegar, habanero jam and honey. Stir constantly until the jelly fully dissolves.
- Once it starts to simmer, reduce the heat to low. Continue letting it simmer for 8–10 minutes, stirring occasionally, until it thickens into a glaze.
- Remove from heat, stir in a pinch of salt, and let cool completely before using.
For the Chicken:
- Note: Marinate chicken for at least 30 minutes to an hour, or overnight if time allows.
- Cut chicken into bite-sized cubes by slicing lengthwise first, then cutting into smaller pieces.
- Season with olive oil, salt, pepper, garlic powder, and amore seasoning. Place the chicken in the fridge for an hour or overnight to marinate.
- Remove chicken from the fridge about 15–20 minutes before cooking to take the chill off.
- Preheat air fryer to 390°F, then air fry chicken for 7–12 minutes, or until internal temperature reaches 165°F, shaking or flipping halfway through.
- Let chicken cool at room temperature for about 20–30 minutes before refrigerating to chill completely.
For the Salad:
- Layer the salad in a jar or bowl: start with chicken, then mozzarella, followed by cherry tomatoes. Add plenty of fresh basil on top.
- Add a generous drizzle of the balsamic glaze.
- Shake (if in a jar) or gently toss. Taste, adjust seasoning as needed and enjoy!
Notes
If you’re taking this on the go, try to hold off on drizzling the balsamic glaze until you’re ready to eat. It helps keep the tomatoes and mozzarella from getting too saturated. But honestly, even if you toss it all together ahead of time, it’s still going to be so delicious.
