Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Line a baking sheet with parchment paper. Set aside.
  2. Add the shredded coconut to a food processor and blend until a coarse crumb forms. Reserve 1 Tablespoon for garnish and set aside.
  3. Add the remaining ingredients to the shredded coconut in the food processor and blend until a soft dough forms.
  4. Form the mixture into even balls using a cookie scoop that is 1-3/8" in diameter. The dough will be soft and sticky. It will firm up once it sets in the refrigerator. If you don't have a cookie scoop, you can form the dough into even balls with your hands, roughly an 1" in diameter.
  5. Transfer balls onto a line baking sheet. Sprinkle tops with reserved coconut.
  6. Cover with plastic wrap and place in the fridge to set for at least an hour before serving.
  7. Transfer to an airtight container. Store in the fridge (keeps up to 3 days) or freezer (keeps up to two months) until ready to enjoy.

Notes

Serving Size: 2 Balls Leftovers: Refrigerate in an airtight container for up to three days or freeze for up to two months. Additional Toppings: Top with shredded coconut, coconut sugar, and lime zest. No Maple Syrup: Use honey or agave instead.
