- to a food processor, combine cottage cheese, greek yogurt, monk fruit, salt, & vanilla extract.
- once pureed, add protein powder (or flavor of choice from notes) in.
- pour into a small container & freeze for 4–6 hours or overnight.
- *option to scoop into balls around the 2 hour mark, then store back in the freezer to solidify - makes it easier to grab when you want it!
- when ready to serve, let sit out 10-15 minutes before scooping.
- add ice-cream to a bowl & top with anything you like!
