chipotle raspberry black bean turkey skillet
i love getting inspo from a restaurant! i turned the chipotle raspberry black bean dip from so long's in MHK into a delicious easy skillet meal!
Ingredients
chipotle raspberry jam
- 1.5 cups1.5 cups1.5 cups Frozen Raspberries
- 111 Lemon, juiced
- 0.25 cup0.25 cup0.25 cup Water
- 2 Tbsp2 Tbsp2 Tbsp Lakanto Classic Monkfruit Sweetener (with Erythritol), or sweetener of choice
- 0.5 tsp0.5 tsp0.5 tsp Chipotle Powder, may sub chipotle peppers in adobe sauce
the skillet
- 1 lb1 lb1 lb Ground Turkey, may sub any ground mea
- 2 oz2 oz2 oz Full Fat Cream Cheese
- 0.5 cup0.5 cup0.5 cup Plain Greek Yogurt
- 0.5 tsp0.5 tsp0.5 tsp Garlic Powder
- 0.5 tsp0.5 tsp0.5 tsp Onion Powder
- 111 Salt and Pepper, to taste
- 15 oz15 oz15 oz Black Beans, drained & rinsed
- 0.75 - 1 cup0.75 - 1 cup0.75 - 1 cup Pepper Jack Cheese
- 111 Cilantro, for garnishing
- 111 Dip Chip (Siete Grain-free), for serving
- 111 Radish, for serving

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- preheat oven to 400.
- in a small saucepan, add all ingredients for chipotle raspberry jam.
- bring jam to a boil, then simmer for 10-15 minutes to thicken.
- option to blend up jam in a food processor or using an immersion blender.
- in a oven safe skillet, brown ground turkey.
- while turkey is cooking, combine cream cheese, greek yogurt, & seasonings.
- mix black beans & creamy mixture into ground turkey.
- spread a layer of the chipotle raspberry jam on top of turkey mixture.
- sprinkle cheese on top.
- place in the oven for 12-15 minutes, with option to broil last 3-5 minutes.
- garnish with cilantro & use tortilla chips or veggies to dip with!
