Cottage Cheese Protein Pancakes
Who doesn’t love a big plate of pancakes that are warm, fluffy, & slightly crispy on the edges!? These are simple to make and filling too. Plus, they feature cottage cheese for both a flavor AND protein boost!
Ingredients
- 5 oz5 oz5 oz Cottage Cheese
- 111 Vanilla Protein Powder
- 111 Egg
- 0.25 cup0.25 cup0.25 cup Einkorn Flour

- 0.25 tsp0.25 tsp0.25 tsp Baking Powder

- 1 Tbsp1 Tbsp1 Tbsp Almond Milk

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Using an immersion blender or food processor, blend cottage cheese until smooth.
- Add egg and almond milk, & mix.
- Add 1 serving of protein powder, einkorn flour, & baking powder. Mix.
- Add additional almond milk if needed in small increments until consistency is similar to thick pancake batter.
- Warm a pan and add butter.
- Cook pancakes until bubbly, flip and cook until done. Repeat with all pancakes.
- Add optional toppings like chocolate chips, butter, & maple syrup. Serve and Enjoy!
