  1. Preheat oven to 350°F (175°C). Line a loaf pan with parchment paper.
  2. In a food processor, combine all ingredients except chocolate chips. Blend until a smooth, thick batter forms, scraping down the sides as needed.
  3. Spread the batter evenly into the prepared loaf pan. Sprinkle mini chocolate chips on top.
  4. Bake for 20–22 minutes, or until a toothpick inserted into the center comes out mostly clean.
  5. Let cool completely before slicing. Enjoy!
