- Preheat oven to 350°F (175°C). Line a loaf pan with parchment paper.
- In a food processor, combine all ingredients except chocolate chips. Blend until a smooth, thick batter forms, scraping down the sides as needed.
- Spread the batter evenly into the prepared loaf pan. Sprinkle mini chocolate chips on top.
- Bake for 20–22 minutes, or until a toothpick inserted into the center comes out mostly clean.
- Let cool completely before slicing. Enjoy!
