Cowboy Caviar with Hot Sauce Dressing
This cowboy caviar is such an easy, crowd-pleasing recipe to make! It's a delicious and high-fibre dip that pairs well with tortilla chips. It's also delicious as a side or appetizer for a party. It's no bake and so easy to throw together. Simply combine all the ingredients into a bowl, make your dressing and toss everything together!
Ingredients
For the Cowboy Caviar

- 1 whole1 whole1 whole Jalapeño Pepper, sliced, optional
- 1 whole1 whole1 whole Red Onion, diced
- 1 whole1 whole1 whole Bell Pepper, yellow (or any colour) diced
- 2 whole2 whole2 whole Green Onion (Scallion), sliced

- 2 whole2 whole2 whole Roma Tomato, diced
- 1 whole1 whole1 whole Avocado, diced
- 1 bunch1 bunch1 bunch Parsley, chopped (or cilantro)

- 2 cups2 cups2 cups Corn Tortilla Chips, for serving
For the Hot Sauce Dressing
- 0.25 cup0.25 cup0.25 cup Extra Virgin Olive Oil

- 1 whole1 whole1 whole Lime, juiced

- 2 whole2 whole2 whole Garlic, cloves of garlic, minced

- 2 Tbsp2 Tbsp2 Tbsp Yellow Bird Sriracha Hot Sauce, or any hot sauce of choice
- 1 Tbsp1 Tbsp1 Tbsp Honey

- 1 pinch1 pinch1 pinch Salt and Pepper, to taste
