Cozy Cheeseburger Soup
Winter weather is upon us. Time to cozy up with this nourishing, and hearty cheeseburger soup, that will leave you feeling full and satisfied!
Ingredients
- 2 lb2 lb2 lb Ground Beef
- 2 tsp2 tsp2 tsp Sea Salt
- 2 tsp2 tsp2 tsp Garlic Powder
- 2 Tbsp2 Tbsp2 Tbsp Salted Butter
- 1 whole1 whole1 whole Red Onion, sub white onion if needed
- 1 cup1 cup1 cup Carrots, (chopped into small bite sized pieces)
- 1 Tbsp1 Tbsp1 Tbsp Spice Islands Garlic & Herb Seasoning
- 1 Tbsp1 Tbsp1 Tbsp Paprika
- 1 tsp1 tsp1 tsp Ground Cumin
- 1 tsp1 tsp1 tsp ground Coriander
- 1 tsp1 tsp1 tsp Sea Salt
- 1 Tbsp1 Tbsp1 Tbsp Primal Palate Organic Garden Ranch Seasoning Mix
- 2 Tbsp2 Tbsp2 Tbsp All Purpose Flour
- 4 cup4 cup4 cup Beef Bone Broth
- 5 whole5 whole5 whole Yellow Potatoes, (I have used purple potatoes in this recipe too)
- 1 cup1 cup1 cup Heavy Cream (Whipping Cream), sub one cup RAW milk
- 111 Boursin Shallot & Chive Cheese
- 2 cup2 cup2 cup Aged Cheddar Cheese
- .5 - 1 tsp.5 - 1 tsp.5 - 1 tsp Worcestershire Sauce
- 0.5 - 1 tsp0.5 - 1 tsp0.5 - 1 tsp Hot Sauce (Frank's RedHot)

Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- In a medium/large sized pot, brown ground beef with garlic powder and sea salt. Make sure to brown over medium to low heat.
- Once beef is browned, remove from pot, and place in a covered container.
- Next, add butter, onion, carrots, and the rest of the spices to your pot. Sauté until vegetables become tender.
- Then, add in flour and stir until veggies are coated.
- While stirring continuously, slowly pour in the bone broth. (The slower you pour in the bone broth, the more easily it will help thicken the soup)
- Next add in potatoes and bring to a boil. Simmer until potatoes are tender.
- Add in cream, ground beef, and Boursin cheese.
- Stir until the Boursin had dissolved completely.
- Then add in cheese, Worcestershire sauce, and Frank's.
- Serve warm! *Optional toppings include, sour cream, bacon bits, green onions, fresh parsley etc!
