Cozy Squash and Orange Sunshine Soup (Edit recipe)

This cozy Squash and Orange soup is perfect for the cold winter months and particularly when you are under the weather. It’s rich in  antioxidants and  super easy to make on sick days, when you are craving a bowl of sunshine. The turmeric, ginger, black pepper, garam masala and cayenne pepper  are healing spices when you’re nursing a cold. The  honey is an antidote to soothe a bad throat. The flavors of the squash and the orange together are surprisingly delightful and delicious!

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Spread the cubed butternut squash in a sheet pan
  2. Drizzle with the oil, turmeric, salt and the cayenne pepper
  3. Cut the top off of the garlic and place on the tray
  4. Drizzle oil over the squash and the garlic
  5. Roast it in a preheated oven at 450 for 35 minutes
  6. Once cooled squeeze the roasted garlic out its skin
  7. Add the squash and garlic to a blender followed by grated ginger root
  8. Add 3 cups of vegetable or chicken broth and blend it all to a smooth consistency
  9. Pour it into sauce pan, add water as per requirement and let it come to a boil
  10. Switch off the stove and squeeze half of an orange juice into the soup
  11. Mix and serve it with a drizzle of olive oil, a bit of honey, a pinch of garam masala and a sprinkle of dried herbs of choice
