Creamy 7 Cheese Herb and Garlic Baked Mac and Cheese
Mac and cheese is the everyone’s type of comfort food and there’s definitely not a right or wrong way to make it—This Mac and cheese certainly is different then what you may have had before;There’s Brie, smoked Gouda, 2 different cheddars, gruyere and chunks of QUESO FRITO(fried cheese) along with two types of herbs and LOTS of garlic. It was creamy, it was cheesy, it was perfect! My mama loved it too so I know it’s a winner.
Ingredients
- Pasta, of your choice, I used shells
- Gruyere Cheese
- Sharp Cheddar Cheese
- Mild Cheddar Cheese
- Queso Frito, or Halloumi
- Brie Cheese
- Gouda cheese, smoked
- fresh Rosemary
- fresh Thyme
- Garlic
- Salt and Pepper
- Smoked Paprika
- ground Nutmeg
- All Purpose Flour
- Unsalted Butter
- Milk, (whole milk)
- Breadcrumbs

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Shred the Gouda, Cheddars, Gruyere and add them to a bowl. Cube the brie and the queso frito and add the brie to the same bowl, leave the queso frito aside for later.
- Chop the herbs and garlic and add those to a separate smaller bowl.
- In a large pot, on medium high,add the butter. when the butter melts, add 1/2 of the herb mixture and cook for a few minutes, whisk in the flour little by little until you dont have anymore, add the rest of the herb mixture and continue whisking.
- whisk in the milk slowly then add the cheese (except the queso frito).
- Season with S+P, Nutmeg and smoked paprika and turn the heat off.
- At this point, start boiling the pasta until al dente and turn on the oven to 375.
- Add olive oil to a frying pan on medium heat and add the queso frito. Fry until golden brown on both sides and put aside until later.
- If you’re making your own breadcrumbs, cube a slice of bread and add it to a hot pan with olive oil, toast until golden brown on both sides then add it to a food processor along with rosemary and process until it turns into breadcrumbs.
- Place the Cheese mixture back on medium heat, add the pasta, mix and then add the queso frito. Mix some more and top it off with the breadcrumbs.
- Place it in the oven and bake for 10-15 minutes but keep your eye on it after 10 minutes. Bake until golden brown at the top!
