Lingonberry Waffles (Edit recipe)

I’m a sucker for waffles and these did not disappoint. If you can’t find Lingonberry Jam, you can use any jam you’d like. The taste is similar to cranberries but are not quite as tart.

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Preheat your waffle iron, spray with non stick cooking spray ( I use Coconut) and set aside.
  2. In a large bowl whisk together the flour, baking powder, sugar, salt, and cinnamon.
  3. In a medium bowl beat the egg whites with a hand mixer until stiff peaks form. Set aside.
  4. In a separate bowl mix together the egg yolks, oil, mascarpone, milk and vanilla extract.
  5. Add the egg yolk mixture to the dry ingredients and mix well.
  6. Fold in the Lingonberry Jam then fold in the egg whites.
  7. Pour the batter onto your hot waffle iron and cook according to manufacturer's directions.
  8. Serve immediately with Creme Fraiche, Lingonberry Jam, Fresh berries and honey.
  9. Enjoy!
