Creamy Chicken Broccoli Pasta (Gluten Free)
In my pre-Celiac days, I spent years working at an Italian chain called Bertucci’s. It’s been decades since, but I still find myself craving their rigatoni with broccoli and chicken. I decided to create my own version, and as soon as I took that first bite, I was instantly transported back. It was so fun—and surprisingly easy—to whip up. And of course, this version is fully gluten free!
Ingredients
- 12 oz12 oz12 oz Gluten-Free Paccheri Pasta
- 16 oz16 oz16 oz Roasted Garlic Alfredo Sauce - Yo Mama's Foods, 1 jar

- 1 Tbsp1 Tbsp1 Tbsp Olive Oil

- 1 lb1 lb1 lb Chicken Breast, cubed

- 2 cups2 cups2 cups Broccoli, chopped
- 1/2 tsp1/2 tsp1/2 tsp Salt

- 1/2 tsp1/2 tsp1/2 tsp Black Pepper

- 1/2 tsp1/2 tsp1/2 tsp Garlic Powder

- 1/2 cup1/2 cup1/2 cup Chicken Bone Broth

- 1 Tbsp1 Tbsp1 Tbsp Lemon Juice, one squeeze!
- 1/4 tsp1/4 tsp1/4 tsp Red Pepper Flakes, optional, to taste

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Bring a large pot of salted water to a boil, add your pasta, and cook according to package instructions. In the last 4-5 minutes of cooking, add the broccoli so it softens with the pasta. Once done, drain and set aside.
- Meanwhile, in a large skillet over medium heat, warm the oil. Add the cubed chicken breast, seasoning with salt, pepper, and garlic powder. Cook for about 5-7 minutes, stirring occasionally, until the chicken is fully cooked with an internal temperature of 165°F. Remove the chicken from the skillet and set aside.
- In the same skillet, add the garlic alfredo sauce, chicken broth, and a squeeze of lemon. Stir and bring everything to a gentle simmer over medium-low heat, letting it cook for about 5 minutes while stirring occasionally.
- Return the chicken, pasta, and broccoli to the skillet, giving everything a gentle toss to coat in the sauce. For a bit of heat, sprinkle with crushed red pepper if desired.
- Taste and adjust seasonings as needed. Serve warm and enjoy!
