Creamy Roasted Tomato Soup with Grilled Cheese Croutons
Not only is a creamy tomato soup comforting, nourishing and delicious, but add the grilled cheese croutons to it and you have yourself a party in your bowl. Sure, you could just dip your grilled cheese into your soup. And have at it that way if you wish! But slicing that bad boy up into bite sized pieces and spooning it with some tomato soup is FUN!
Ingredients
- 2 lb2 lb2 lb Tomato, Vine-Ripened, halved
- 1 whole1 whole1 whole Yellow Onion, quartered
- 3 cloves3 cloves3 cloves Garlic, peeled, cut in half

- 3 Tbsp3 Tbsp3 Tbsp Extra Virgin Olive Oil

- 1 tsp1 tsp1 tsp Salt

- 0.5 tsp0.5 tsp0.5 tsp Black Pepper

- 1 Tbsp1 Tbsp1 Tbsp Balsamic Vinegar
- 2 cups2 cups2 cups Chicken Broth, Low Sodium

- 1 Tbsp1 Tbsp1 Tbsp Tomato Paste

- 1 tsp1 tsp1 tsp Crushed Red Pepper Flakes (Homemade) (click for recipe)
- 0.5 cup0.5 cup0.5 cup Heavy Whipping Cream
- 4 whole4 whole4 whole Bread, slices

- 8 pieces8 pieces8 pieces White American Cheese
- 3 Tbsp3 Tbsp3 Tbsp Butter, Salted

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat oven to 400f.
- Place tomatoes, onion, and garlic on a large baking sheet. Drizzle with olive oil and season with salt and pepper.
- Roast for 30 minutes.
- Let vegetables cool for 5 minutes, then add to a blender with broth and tomato paste.
- Blend until smooth.
- Pour into a large pot, stir in balsamic and red pepper flakes. Bring to a simmer for 5 minutes.
- Add heavy cream and stir.
- Serve hot.
- For the Grilled Cheese: divide and spread the butter onto 1 side of each slice of bread. Place 2 slices of bread, butter side down, in a warm pan. Add 4 slices of cheese to each piece. Cover the pan. Once the cheese starts melting, remove the lid and add the remaining slices of bread, making them into sandwiches, with the butter side up. Flip the whole sandwich to toast the other slice of bread. When toasted to your liking, remove from the pan and cut into bite sized pieces. Add grilled cheese croutons to each bowl.
