Crispy Air Fryer Hawaiian Pizza Rice Paper Rolls
When everyone's favorite sweet and savory pizza meets crispy air fryer rice paper, what's not to love?? We're team pineapple on pizza in this house because we love the pop of sweetness it adds. These bite size beauties will be loved by all, and they're finger food friendly. Perfect for gameday or just any regular ole' day when you feel like eating something fun!
Ingredients
- 1 lb1 lb1 lb Pasture-raised Chicken Breasts - US Wellness Meats, or shredded rotisserie chicken

- 1 lb1 lb1 lb Sugar-Free Canadian Pork Bacon Slices - US Wellness Meats

- 1 bunch1 bunch1 bunch Green Onion (Scallion), finely chopped

- 20 oz20 oz20 oz Pineapple Tidbits in 100% Pineapple Juice, drained and roughly chopped (1 can)
- 8 oz8 oz8 oz Mozzarella, Shredded
- 2 Tbsp2 Tbsp2 Tbsp Adobo Seasoning - Primal Palate

- 2 cups2 cups2 cups Veggie Pasta Sauce - Daylight, or marinara sauce of choice

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
Prepare Filling
- Boil enough chicken broth to cover chicken breasts, if using, and add chicken to boiling broth.
- Boil for 15 minutes or until chicken is fully cooked.
- Shred then roughly chop, then set into a large bowl.
- Crisp up Canadian bacon however you prefer. I placed on a wire baking rack (over a sheet pan) and put into a preheated oven at 400F for 25 minutes, then drained on paper towel. You could pan fry or air fry too. Just keep an eye on it because your Canadian bacon could take less time, depending on thickness!
- Chop Canadian bacon and add to bowl with chicken.
- Add finely chopped green onions, drained & chopped pineapple tidbits, shredded mozzarella, and Adobo seasoning. Mix until completely combined.
- Add 2 cups Daylight or marinara of choice, then mix until fully incorporated.
Rice Paper Rolls
- Set up your station: Add lukewarm water to shallow dish large enough to fit rice paper. Have a large cutting board ready, along with your filling and 1/4 cup measure. Line a large plate or sheet pan with parchment paper to place prepared rolls onto as you're making them.
- Place rice paper wrapper into dish with water until it becomes flexible and soft (about 20-30 seconds), then carefully place onto cutting board.
- Place 1/4 cup filling in the top 1/3 of the wrap, then use your hands to shape the filling into a log. Start at the top and roll toward you once, then tuck in the sides, then continue rolling toward you until you've used up the whole wrapper. Roll as tightly as you can without ripping the rice paper. It might take a few tries, but once you get the hang of it, it's easy and fun!
- Carefully place onto the parchment-lined sheet pan.
- Continue until all filling has been used. This will make about 32 rolls.
- Preheat air fryer to 400F.
- Spray air fryer basket with cooking oil, then place rolls into basket. Don't crowd the basket, you don't want the rolls to touch each other. You'll need to do this in batches.
- Spray the tops of the rolls with cooking oil.
- Air fry for 12-15 minutes.
- Place onto a wire rack to cool.
- Garnish with chives if desired, and serve!
Notes
These reheat well in the oven if you need to make in advance or want to batch cook to eat throughout the week. Place on a sheet pan into a preheated oven at 375F for about 15 minutes, or until you can hear them sizzling and bubbling!
