Crispy coconut tofu baguette with curry lime mayo & ginger chilli slaw
A seriously good plant-based sandwich packed with crispy coconut & sesame tofu, curried crispy aubergine, creamy mango curry-lime mayo, crunchy ginger chilli slaw and pickled red onions, all tucked into a crusty sourdough baguette. Perfect for taking on a picnic or packed lunch.
Ingredients

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Make the tofu: Pat the tofu dry and cut into 4 relatively thin slabs. Mix the flour, tamari and maple syrup together, then gradually whisk in the plant milk until you have a thick batter. In a separate bowl, mix the desiccated coconut, sesame seeds, chilli flakes, garlic granules, salt and pepper. Dip each tofu slab into the batter, then press firmly into the coconut-sesame coating on both sides and around the edges. Lightly spray with oil and air fry at 185–190°C for 12–15 minutes, carefully turning halfway, until golden and crispy.
- Make the aubergine (optional): Cut the aubergine into small bite-sized chunks. Toss with the olive oil, curry powder, arrowroot powder and a good pinch of salt. Air fry at 190°C for around 12–15 minutes, shaking a couple of times, until golden and crispy around the edges and tender inside.
- Make the curry-lime mayo: Mix the vegan mayo, curry powder, mango chutney, lime juice, lime zest and salt together. Taste and adjust the curry powder if you want a stronger flavour.
- Make the slaw: Add the cabbage, carrot, spring onions, chilli, coriander and ginger to a bowl. Add the rice vinegar, lime juice, sesame oil and salt, then toss well. Leave for around 10 minutes to soften slightly while keeping its crunch. Drain off any excess liquid before assembling.
- Assemble: Cut the baguette into two portions and slice open. Lightly toast the cut sides. Use a vegetable peeler to make the cucumber into ribbons and pat dry with kitchen roll. Spread generously with the curry-lime mayo, then layer with cucumber ribbons, crispy tofu, curried aubergine, ginger chilli slaw, pickled red onions and fresh coriander. Add a little more mayo, then top with the other half of the baguette.
Notes
Let the tofu and aubergine cool slightly before assembling if you’re taking the sandwiches out with you, otherwise the heat can make the bread soggy. Drain the slaw well and pat the cucumber dry to keep the baguette as crisp as possible. Wrap in baking parchment for transporting — perfect for a picnic or lunch on the go. Don't have an air fryer? that's ok, use an oven instead! same temperature, just may take a little longer!
