These smoky roasted red pepper butter beans are the ultimate cosy, comforting dinner. Sweet roasted peppers, juicy tomatoes and garlic are blended into a rich, silky sauce before adding creamy butter beans and topping with whipped tofu feta, crunchy tamari seeds and a little chilli oil. And the best bit? They’re packed with plant protein and fibre too. Serve with thick slices of toasted sourdough and get mopping!

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Roast the veg: Preheat the oven to 200°C fan / 220°C conventional. Add the peppers, cherry tomatoes, red onion and garlic to a roasting tray. Drizzle with olive oil and season with the smoked paprika, cumin, chilli flakes, salt and pepper. Toss everything together and roast for 25–30 minutes, until soft, juicy and starting to char around the edges.
  2. Make the whipped feta: Meanwhile, add all the whipped feta ingredients to a food processor or blender and blitz until completely smooth and creamy. Taste and adjust the lemon and salt if needed. You’ll only need half of the batch for this recipe, so pop the rest in the fridge for another meal.
  3. Blend the sauce: Add the roasted vegetables to a blender with the tomato purée, maple syrup, red wine vinegar and plant cream. Blend until beautifully smooth and silky.
  4. Get the beans saucy: Pour the red pepper sauce into a large frying pan and add the butter beans. Add a splash of vegetable stock as needed and gently simmer for 8–10 minutes, until the sauce has thickened and is clinging to the beans. Finish with a squeeze of lemon and check the seasoning.
  5. Serve: Divide the smoky butter beans between two bowls and top with generous dollops of whipped tofu feta, crunchy seeds, fresh parsley and a drizzle of chilli oil. Serve with toasted sourdough and get moppin’.

Notes

The sauce should be thick and scoopable, not soupy, so start with only a small splash of stock and add more if needed. The whipped tofu feta recipe makes more than you need here. Keep the remaining half refrigerated in an airtight container and use it in bowls, wraps, salads or on toast. Based on the ingredients used, this comes in at 30g+ protein and around 20g fibre per serving, although nutritional values will naturally vary depending on the exact brands and sourdough used.
