Easy Lemon Bars
Easy lemon bars have a tart and irresistible lemon filling layered on top of a delicious and simple graham cracker crust. These bars are a crowd pleaser and perfect for any occasion!
Ingredients
For the Crust
- 150 gram150 gram150 gram Graham Cracker Crumbs, (1 1/2 cups)
- 50 gram50 gram50 gram Granulated White Sugar, (1/4 cup)

- 1/4 tsp1/4 tsp1/4 tsp Salt

- 70 gram70 gram70 gram Butter, Unsalted, melted (5 Tbsp)

For the Filling
- 14 oz14 oz14 oz Sweetened Condensed Milk, (1 can)
- 555 Egg Yolk, large
- 111 Lemon, zested

- 160 ml160 ml160 ml Lemon Juice, fresh (2/3 cup)
For the Raspberries
- 6 oz6 oz6 oz Raspberries, Organic
- 2 tsp2 tsp2 tsp Granulated White Sugar

- 1 tsp1 tsp1 tsp Lemon Zest
- pinch pinch pinch Lemon Juice, fresh

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat oven to 350°F/177°C. Line an 8x8 inch square baking dish with parchment paper and set aside.
- In a medium mixing bowl combine graham cracker crumbs, sugar, salt and melted butter until evenly mixed. Press crumb mixture evenly into an 8-inch square pan. Bake crust for 10 minutes. Allow to cool while preparing filling.
- In a medium bowl, add condensed milk and the yolks. Whisk together until combined. Add the lemon zest and juice and mix well. Pour mixture into pan.
- Bake for 15-17 minutes or until center is just set.
- Allow to cool to room temperature.
- Place in refrigerator to chill for at least 2 hours. Cut into bars.
- In a small bowl, combine raspberries, sugar, lemon juice and lemon zest. Roughly mash berries with a fork and set aside. Allow to sit for 15 minutes. Spoon over cut bars and serve immediately.
