Easy Sheet Pan Breakfast
This Easy Sheet Pan Breakfast is one of my favorite ways to start the day — especially when I want something warm, filling and fuss-free. The roasted sweet potatoes help keep me full longer, and baking the eggs right on the quarter sheet pan saves time and dishes.
You can easily double or triple the recipe to feed a crowd, and using multiple quarter sheet pans allows everyone to customize their own!
Ingredients
- 1 whole1 whole1 whole Sweet Potato, peeled and diced into 1-inch pieces
- 0.50.50.5 Green Bell Pepper, diced into 1-inch pieces
- .5.5.5 Yellow Onion, diced into 1-inch pieces
- 3 - 43 - 43 - 4 Egg
- 2 Tbsp2 Tbsp2 Tbsp Extra Virgin Olive Oil

- 0.5 tsp0.5 tsp0.5 tsp Kosher Salt

- .25 tsp.25 tsp.25 tsp Black Pepper

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat oven to 400 degrees F.
- Add diced potato, olive oil, salt and pepper to a quarter sheet pan. Roast in oven for 20 minutes. Remove and stir in onion and bell pepper. Return to teh oven and cook for an additional 15 minutes.
- Remove from oven, once again, and toss. Carefully crack 3 or 4 eggs onto the vegetables. Leave a couple of inches between each egg.
- Return pan to oven and bake until eggs are set, about 10 minutes.
- Serve with salt and pepper and hot sauce (optional).

Sheet pan meals are one the best ways to make a healthy meal with little effort. This looks delicious!
