egg in a hole protein pancake avocado toast
in this FABULOUS breakfast concoction, I am combining egg-in-a-hole & avocado toast. but in true erica fashion - I'm trading the "toast" for my protein pancakes! follow one of my two variations OR feel free to customize your toppings to whatever sounds good for the ultimate breakfast spread!
Ingredients
fried egg in a hole protein pancake
- greek yogurt protein pancakes & waffles (click for recipe)
- over-easy fried eggs (click for recipe)
basic spread
- 0.5 cup0.5 cup0.5 cup Cottage Cheese
- 1/4 cup1/4 cup1/4 cup Avocado, for avocado variation
- 1 Tbsp1 Tbsp1 Tbsp Classic Monkfruit Sweetener (with Allulose) - Lakanto

- 1 Tbsp1 Tbsp1 Tbsp Capers, the juice
- 1 Tbsp1 Tbsp1 Tbsp Lemon Juice
- 1 tsp1 tsp1 tsp Lemon Zest
- 0.25 tsp0.25 tsp0.25 tsp Cowboy Salt - Texas Salt Co., or smoked salt of choice

variation 1
- Mini Chicken Breakfast Sausage Links
- maple keto granola (click for recipe), or my protein keto granola
- Jalapeño Botana Sauce - Siete Foods

variation 2
- Prosciutto
- Feta Cheese
- Arugula, or veggies of choice
- Herbs, Fresh

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
fried egg in a hole protein pancake
- make a batch of my protein pancakes, then using a 2-3” round object (like a metal lid or a egg mold) cut a hole in the center to place egg inside (of course, keep it for eating!)
- grease skillet, then reheat pancake for 2-3 minutes on one side.
- flip pancake to other side & lower heat to low, then crack an egg in the center - holding the yolk in place to keep it in the center.
- pour in a couple tablespoons of water, then add a lid & let cook until a very thin film forms over top for the PERFECT over-easy fried egg.
- let it cook for 1-2 minutes to let the white set.
make your spread
- using a food processor or immersion blender, add cottage cheese, avocado monk fruit, caper juice, lemon juice, lemon zest, & salt.
assemble your toast
- remove toast from skillet, then add your spread of choice + any additional toppings you like.
