- 2 Tbsp2 Tbsp2 Tbsp Parsley, Flat Leaf, chopped

- 1 Tbsp1 Tbsp1 Tbsp Basil, Fresh

- 2.5 cups2.5 cups2.5 cups Marinara Sauce, homemade or store bought
- 0.75 cup0.75 cup0.75 cup Mozzarella Cheese, shredded

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat your oven to 400°F.
- Slice the eggplants lengthwise into 1/4-inch thick slices. Sprinkle both sides with salt and let them sweat on paper towels for about 10 minutes. Pat dry.
- Lightly oil a baking pan, lay out the eggplant slices, and bake for 5-10 minutes until softened. Let cool.
- Mix the ricotta, 1/4 cup mozzarella, Parmesan, egg, basil, parsley, salt, and pepper in a bowl to make the filling.
- Spread a layer of tomato sauce in a baking dish. Place a spoonful of filling on each eggplant slice, roll it up, and arrange in the dish.
- Top with remaining sauce and sprinkle with 1/2 cup mozzarella. Cover with foil and bake for 30 minutes. Uncover and bake an additional 10 minutes until bubbly and golden.
