Fattoush Salad
Fattoush is one of my all time favorite salads - the perfect side to any meal or a meal all on its own! Authentic fattoush uses pomegranate molasses in the dressing, but I like to use date syrup instead. I can’t wait for you to try it!
Ingredients
Dressing
- 0.333 cup0.333 cup0.333 cup Original Extra Virgin Olive Oil - Kosterina
- 2 whole2 whole2 whole Lemon, Juiced, about 1/4 cup lemon juice
- 2 tsp2 tsp2 tsp Medjool Date Syrup
- 3 cloves3 cloves3 cloves Garlic, Minced
- 1 tsp1 tsp1 tsp Salt, Or to taste
- 1.5 tsp1.5 tsp1.5 tsp Mint, Dried
- 1.5 tsp1.5 tsp1.5 tsp Sumac
Salad
- 1.5 - 2 bunch1.5 - 2 bunch1.5 - 2 bunch Lettuce, Romaine
- 3 whole3 whole3 whole Persian Cucumber, Sliced and halved
- 0.75 cup0.75 cup0.75 cup Tomato, Cherry
- 4 whole4 whole4 whole Radish, Chopped
- 0.25 cup0.25 cup0.25 cup Red Onion, Thinly sliced
- 0.25 cup0.25 cup0.25 cup Mint Leaves, Chopped
- 1 cup1 cup1 cup Gluten-Free Pita Bread - Against the Grain, Cut up and fried or baked in avocado oil
Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Whisk together all dressing ingredients. Set aside.
- Pita Bread: If baking , preheat oven to 425F. place pita bread pieces on a parchment lined baking sheet and either spray or brush on avocado oil. Season with salt and pepper. Bake for 5-10 minutes or until golden brown. If frying, in a large skillet, heat avocado oil on medium heat. Add the pita bread and season with salt and pepper. Cook stirring frequently until the pita break becomes crispy and golden in color, about 5-7 minutes. Set aside.
- Place the lettuce, cucumbers, tomato, radishe, red onion and mint in a large serving bowl. Add pita bread to salad right before serving. Pour the dressing on top and toss to combine.
