Flower Dirt Cups
🌳 These dirt cups are the cutest way to celebrate Tu B’Shevat, the birthday of the trees (or save it down for Earth Day! Or even Valentine’s Day… they’re flowers people!)
🍇 My kids loved trying some of the seven species like dates + figs. While they weren’t a fan of those dried fruits on their own, paring them with chocolate pudding was a definite YES for both of them.
Ingredients
Avocado Chocolate Pudding
- 111 Avocado, Ripe- not mushy... if it's too ripe it will have an overpowering avocado taste that we do not want
- 4 Tbsp4 Tbsp4 Tbsp Pure Maple Syrup, Can sub with date syrup if you want it sweetened only with fruit
- 4 Tbsp4 Tbsp4 Tbsp Almond Milk, or any milk of choice
- 2 Tbsp2 Tbsp2 Tbsp Cocoa Powder

- 0.5 tsp0.5 tsp0.5 tsp Vanilla Extract

- 0.25 tsp0.25 tsp0.25 tsp Coconut Aminos
- 0.25 tsp0.25 tsp0.25 tsp Salt

Pretzel Flowers
- 0.5 cup0.5 cup0.5 cup Gluten-Free Pretzel Sticks
- 6 oz6 oz6 oz Baking Chocolate Chips, Melt with 1/2 tsp coconut oil

- 0.25 cup0.25 cup0.25 cup Graham Cracker Crumbs
- 0.25 cup0.25 cup0.25 cup Apricots, Dried, cut into fourths
- 2 Tbsp2 Tbsp2 Tbsp Pumpkin Seeds

- 0.25 cup0.25 cup0.25 cup Strawberries, sliced into 4 pieces
- 0.25 cup0.25 cup0.25 cup Blueberries
- 0.25 cup0.25 cup0.25 cup Sprouted Sweet & Salty Trail Mix - Lark Ellen Farm

Dirt
- 1 cup1 cup1 cup Graham Cracker Crumbs, Can also use chocolate cookie thins

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- For the chocolate pudding: Add all ingredients (except for chocolate chip garnish) to a food processor and blend until smooth. Garnish with chocolate chips. Serve immediately or store in refrigerator.
- For the pretzel flowers/tree: Line a small baking sheet with parchment paper.
- Melt your chocolate chips and coconut oil together and stir until smooth (you can either do this on the stovetop or in the microwave).
- For the tree: Line 4 pretzel sticks up next to each other and using a spoon, coat with chocolate. Use a spoon to create branches with your chocolate (make it thick so it won't crack once solid). Decorate the bottom with graham crackers and the top with assorted dried fruits/nuts/seeds to resemble a tree with hanging fruit.
- For the flowers: Take a pretzel stick and coat in chocolate. Add a dollop of chocolate at the top. Decorate with a blueberry in the middle and strawberry slices surrounding it.
- Take another pretzel stick and coat in chocolate. Add a dollop of chocolate at the top. Decorate with a sunflower seeds in the middle and blueberries surrounding it.
- Take another pretzel stick and coat in chocolate. Add a dollop of chocolate at the top. Decorate with a pumpkin seeds in the middle and sliced apricots surrounding it.
- Freeze for 30+minutes until the chocolate hardens, and enjoy!
- To assemble: In a small plastic cup, add your pudding. Sprinkle on crushed graham crackers or chocolate cookies. Top with some pretzel flowers/trees and enjoy!
